Yeah…we’re pretty legit now.

Kacie did a fantastic job posting about our first wedding, but another post was due since I finally got around to putting the other photos onto my computer! That is, the ones that were not lurked off of facebook. hah! So proud of you, Kacie.

They may not look so tasty there, but they sure did after we were done with them! Example:

Weddings and Pumpkin Pie

Lori and I did our first wedding a month or so ago. Our friend Erin, the lovely bride, asked us to make our signature oreo cupcakes for the occasion. So that we did. About 140 of them. I had to work the day before and the day of the wedding (it just so happened to fall on the busiest weekend of work all year) so we baked half of the cupcakes the night before and half the day of, and Lori iced them all at the venue. So proud of her! And, I must say, it was neither as expensive as I thought nor as time consuming. (So all you people ready to get married and pay hundreds and, heaven forbid, thousands of dollars on a wedding cake, just see us. We’ll treat you right.)

Because I was learning about fish at Sunny 105.9′s  Captain Party, Lori was the only one who got to witness our little cupcakes’ debut, so all the pictures are on her camera, just waiting to be posted at a later time. However, because I am such a great creeper, I’ve lurked some out on facebook to show you.

I found this picture on a facebook belonging to someone I don’t know. Despite that being weird, his caption said something to the extent of, “THESE CUPCAKES WERE KILLER DELICIOUSNESS!”

On another note, with the holiday season looming, I’d like to share a tasty nugget of information with you. Pumpkin Pie cupcakes. So easy, yet so so so SO delicious.

I’ve been experimenting with pumpkin for a while now, simply because it makes a great egg substitute. (Seriously, the first time I experienced pumpkin chocolate chip cookies, I almost killed over them…they’re dangerous, people…)

Anyways, with a box of spice cake and 1/4 c. canned pumpkin per egg, you’ve got yourself a great pumpkin pie cake! And cream cheese makes it even better!

First of all, I just need to declare that this is my first post. Ever. Kacie has been so wonderful as to try and update this thing, but I’m afraid that I have definitely been slacking.  Alright, more than slacking. Non-existent. However, that is all changing right now!

Hello, I’m Lori. Thank you for visiting our blog. I know it may not look like much right now, but it’s a work in-progress. Hopefully our delicious treats will take your mind off of it. Anyway, I hope that you enjoy your time here and you visit us again. Basically, let’s be friends. Okay? Okay.

Moving along, the subject for my very first post is:

That’s right, folks. The  chocolate + peanut butter cupcake. Let’s face it, chocolate + peanut butter were essentially made for each other! Kacie and I kept getting requests for this particular flavor combo, and finally made them during an epic two-day baking session. Our lives were never the same.

These little treats are composed of a basic chocolate cake with peanut butter chips mixed in, a chocolate + peanut butter swirled frosting, and more peanut buttery pieces on top! I’m not afraid to admit that these are officially my favorite creation.

Okay, I suppose that is all for this most exciting first post.  We have some big things coming up, like our first job this friday! A very lovely friend of ours will be getting married, and we’ve been asked to bake cupcakes for the big day! But, more to come on that later…seriously.

So, we’ve definitely been slacking on the posting lately. We have had some great new creations lately, and the pictures are to come. Soon. I promise. Seriously.

Speaking of great, our dear friend Hannah recently made french toast cupcakes. Yes, folks, I said french toast. In the words of Rachel Ray, DELISH! Just wanted to give her a shout out and blog high five on that one.

In other news, this week was my last official, scheduled week at my internship. On the bright side, I’ll have more time to bake (and possibly update this), but on the down side, every one at my internship has been really really great. To honor their greatness, I’m planning on baking them cupcakes next week and surprising them with some delightful sugary treats. I’m thinking Oreo….? But I’d like to also do another flavor. What do you think? Stick with a standard favorite, or any suggestions for new creations?

One day I will have a cute cupcake shop. We will bring love disguised as sugary treats to all of the community. People from all over town will flock to our shop, to eat or just to hang out. But when they eat, boy oh boy will they be excited. They’ll soon be addicted.

Our shop will be a community icon. We will have a little outside patio, with tables and chairs and cute umbrellas. Our doors will almost always be open. I’ll give special discounts to people who ride their bikes to our shop. I won’t make people leave if they don’t buy cupcakes. I’ll sit down, talk to them, and eat a cupcake for them.

I’ll throw community parties at our store. Birthday parties, 4th of July celebrations, and ice cream socials. Every Sunday I will invite my customer friends for brunch. I’ll make good coffee, pancakes, eggs, my famous grilled cheese, and of course- more cupcakes! We’ll all eat together.

I won’t get offended when people ask us to reach out to the community. In fact, I’ll gladly do it. I won’t scoff, laugh, or ignore requests for leftover cupcakes at the end of the day. I’ll be glad to give them away. I’ll make sure to know our regulars’ names. They’ll invite me to their weddings, dinner parties, and kids’ birthday parties. I’ll hook them up.

Maybe one day I’ll have a cute chubby ginger baby. I’ll bring her into the shop with me, and soon everyone will know all about her and watch as she grows up. She’ll love cupcakes too. She’ll grow up, come home from college, and all of my customer friends will tell her boyfriends embarrassing stories about all the cupcakes she used to eat. I’ll laugh.

It’s gonna be so good.

i think just about everyone has at least one friend that refuses to make any decision whatsoever. maybe you’re “that guy” / “that girl.” maybe even i’m that person. anyways, for deciders and non-deciders alike i present to you the cupcake i affectionately call “indecision cupcake.” lori calls it “equality cupcake.” maybe you just want to call it tasty. choose whichever name you like, or don’t. because i think you’re allowed to have both options at least once in awhile.

it’s been awhile since we’ve updated this thing, but school is finally out, so we’re back!

our blog writing may have taken a break for exams, but our baking certainly hasn’t. i just uploaded 80 pictures off of my camera, and about 10 of them had people in them. the rest were all pictures of desserts. i love my life.

our lovely roommate missy graduated from UCF this weekend! to celebrate her accomplishments, we rewarded her with cupcakes. KEY LIME PIE cupcakes, to be specific. they might possibly be my new favorite. i mean, i definitely didn’t have one for breakfast this morning…

P1010811that picture doesn’t really show how pretty they were, but you can see the graham cracker crust on the bottom which was a GREAT call on our part. then we did a vanilla cake with a key lime pie filling slash vanilla icing topped with graham cracker crumbs. delicious.

for those who aren’t big on key lime (crazy, i know, that people like that actually exist…) we also did a pretty all vanilla cupcake. lori had some fun icing them.

hello my little cupcake lovers! welcome to hey there cupcake, a blog dedicated to our love for the tasty little drops of heaven we call cupcakes.

here’s a little bit about ourselves.

our love for cupcakes started back in the day. way back in the day. like the womb days. our mom would only eat cupcakes for weeks at a time. what other moms find in pickles and ice cream, she found in funfetti. (this might possibly definitely be a lie, but i like to believe it’s true.) so i guess you could say this is what we were born to do. our passion for cupcakes have grown with us. we’ve had good ones and bad ones, moist ones and dry ones, free ones and overpriced ones. (not mentioning any names here.) one of us has even worked selling cupcakes! (see overpriced comment.) these days, we find ourselves eating lots and lots of cupcakes of course, but getting pumped as ever to bake them for our friends. we’re just in the beginning stages of our dessert innovations, and as we experiment with flavor combos, new icings, and fun designs, we hope you find some enjoyment in it as well.
